This Cowboy Caviar recipe is a colorful and flavorful dip that combines black eyed peas, black beans, corn, bell peppers, onions, and jalapenos in a zesty Italian dressing. Perfect for parties, potlucks, or as a side dish for your favorite Mexican meal.
Ingredients

3 cans black eyed peas, drained and rinsed

2 cans black beans, drained and rinsed

2 cans whole kernel corn, drained
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced

1 green bell pepper, diced

1 large sweet onion, diced

1 diced jalapeno pepper (to taste)

2 tsp garlic powder

hot sauce (to taste)

1-2 bottles Italian dressing
Directions
- In a large bowl, combine black eyed peas, black beans, corn, bell peppers, onion, and jalapeno pepper.
- Add garlic powder, hot sauce, and Italian dressing. Mix well to combine.
Refrigerate for at least 1 hour (overnight prefered) to allow flavors to meld before serving.
Serve with tortilla chips, pretzel crisps, pita chips or as a topping for grilled chicken or beef and pork tacos. Also great over a salad.

This is some of the best cowboy caviar we’ve had. The texture is perfect and super yummy. We had to put it in a blinder for the picky ones who wanted a softer dip but so good!
